Ingredients:
- 140g caster sugar
- 250g self raising flour
- 1 tsp bicarbonate of soda
- 85g butter (melted)
- 2 eggs
- 200ml milk
- 1 tsp vanilla extract
- 150g blueberries
Method:
- Pre-heat the oven to 200c
- Combine the caster sugar, flour and bicarbonate of soda in a large bowl
- In another bowl mix the melted (and cooled) butter, eggs, milk and vanilla extract
- Pour the wet ingredients into the dry ingredients and add the blueberries. Fold the mixture very lightly just until the ingredients are combined
- Spoon the mixture into muffin cases and bake for 15 minutes
Makes approx 12 muffins
